We do them that way a lot but sometimes I will scale, gut and remove the head and then just fry them whole. The whole fish take a little longer to cook and do seem to have a different flavor, better in my opinion than the fillets. We also bake them in the oven sometimes; pat the fillets dry, dip them in melted butter or margarine, sprinkle with generous coating of Zatarain's Blackened Seasoning, place the fillets in a baking dish and pour in some extra butter/margarine. Bake at 350 until they flake with a fork, usually around 15-20 minutes depending on the thickness of the fillets. Serve with mashed potatoes. I like to dip up some of the seasoned butter that the fish cooked in and mix that in my potatoes. We normally use catfish fillets for that dish but the crappie are good prepared that way too. The blackened seasoning is a bit spicy (hot) so season according to taste.
